Protein bar making machine: what the line does
A bar line turns a sticky mass of dry ingredients and binder into uniform bars. Whatever the bar, the stages are much the same: the binder is prepared, mixed with the dry ingredients, formed into a slab or rope, cooled until it sets, cut to size and, if needed, coated and packed.
Wahal supplies the conveyor line for protein bars, energy bars, granola bars and chikki, and makes the sigma (Z-blade) mixers that suit the mixing stage. Each line is customised to the product and the process.
Mixing the bar mass: Z-blade (sigma) mixers
Bar mass is thick and sticky, which is the material a sigma mixer is built for. Wahal's sigma (Z-blade) mixer has a U trough with two Z-shaped blades turning in opposite directions at different speeds. The intermeshing blades knead the material and move it from the centre to the sides and back, in a cascading action.
- Jacket for heating or cooling on the trough.
- Stainless steel construction available.
- Motor and gearbox sized to the product and process; blade speed can be variable.
- Food uses: food and confectionery products, biscuit dough and chewing gum.
See our sigma mixers for the range.
Binder and ingredients: other Wahal machines
Most bars are held together by a binder, often a cooked syrup, and chikki is set in jaggery or sugar syrup. Wahal already covers these jobs on its other food lines:
- Syrups: the vacuum cooking machine cooks confectionery syrups without burning or caramelization, and our liquid powder mixers are used for sugar syrups.
- Nuts and dried fruit: the multiprocessor granulates almonds for confectionery products and purees dried fruits and nuts.
- Peanuts: roasting, a cooling belt and blanching (skin removal) are stages of our peanut butter plant.
What the line makes: protein bars, energy bars, granola bars and chikki
The same line makes:
- Protein bars: bars with added protein, for example whey or plant protein.
- Energy bars and granola bars: oats, nuts, seeds and dried fruit held together by a binder.
- Chikki: the Indian brittle of peanuts, sesame or other nuts set in jaggery or sugar syrup. You don't need a separate chikki making machine: chikki runs on the same conveyor line.
So one line can cover several bar products.
Capacity, small-scale lines and price
Bar lines are typically built for 100–500 kg/hr.
For startups and small food manufacturers we offer customised small-scale lines. Batch size and floor space are fixed once the product and the equipment configuration are chosen.
Prices are on request. The cost depends on the output, which stages the line includes, the level of automation and the materials of construction.
Trial your bar recipe
You can trial your own bar recipe on Wahal equipment before you decide.
